Delicious and Nutritious Lunches

This week I’m going to share some of our favorite lunches that we enjoy at home. 

One of our family favorites is gazpacho. We love to eat it all year round. It is easy to make, delicious and very nutritious. Below are several of our lunch plates over the past few months. You can see they are not hard to make or complicated. We like to offer a variety foods and fill our plates with lots of color. That is not hard to do when you are using all the amazing veggies and fruits God has blessed us with! All ingredients below are organic.

Gazpacho, baby carrots, broccoli slaw salad and watermelon.

Slices of cucumbers, hummus, a rice cake with seaweed flakes, raisins,
vegan cheese cubes (daiya brand is the best!), and coconut vanilla yogurt with raw nut mix on top.

Diced avocado, slices of cucumbers and beets, GF tortilla chips and applesauce

Just to keep things fun - Lexi and I decided to make healthy Happy Meals a few years ago.

She is very creative and the kids love eating these special plates!

Posting cellphone photos is NOT easy for me. 

I can’t wait to get my new camera and capture food the way it really looks and should be presented.  But I digress.

{Please remember to offer your children foods that are NOT fully processed and loaded with junk, you must include fresh organic veggies and fruit daily to help their growing bodies get all the nutrients they need.  Help them learn how important it is to break free from the Standard American Diet!}  I will share some delicious smoothies that you can make even for the pickiest eater to help them get in all the veggies and fruit they refuse to eat until their taste buds change.

  1. yum!! your lunches look so good!!! I've been on a cook one meal and eat it all week kick lately.... looking forward to when I decide to make more meals... LOL
