Delicious and Nutritious Lunches

These are by far two of our children’s favorite lunches. 

I made homemade corn muffins to pack in their lunches and they were thrilled to find them in there!   I soak sliced apples in a mixture of cold water and lemon/ginger/Echinacea juice to keep them from turning brown or mushy.   



They ask me to pack the following at least once a week!  




Coming up next, a post full of the products I give to our children to help them stay healthy and strong throughout the year!

  2. Beautiful pictures! Everything looks so delicious. I'd love to hear the details about the apple soak. I've used plain lemon juice but some of the kiddos complained that the lemon taste was too strong and bitter.

    Praying that your power is restored soon!

  3. Thinking I'll take a few servings of that 2nd lunch!! :)

    I haven't decided yet I like chickpeas all that well, so I'll have to skip that part of the lunch! haha!!
