Truth be told I can barely contain myself looking at the above photo. If I could make it come to life right this minute I would. That is how good they tasted. I asked our family Pancake King A.K.A. my husband to allow me the honor of making a few changes to our weekly tradition. So together we turned his amazing blueberry, raspberry, and chocolate chip pancakes into pumpkin pie goodness.
Let’s just say they smelled as good as they tasted…mmmmmmm!!! Oh come on Sunday morning so I can do this all over again! Did you notice he even made them look like little pumpkins??? So clever!
The Pancake King has been making over 150 pancakes each weekend for over 7 yrs now. So his recipe has been taste-tested by many discerning testers!

Each batch feeds our family of 11 so you will have to do some adjusting to make the correct amount for your size family. A good place to start would simply be cutting ours in half.
Gluten Free Pumpkin Pie Pancake {Vegan} Recipe:
We use one bag each of the following:
- Pour both flour mixes into a large stainless steel bowl.
- Melt 2-3 TBS coconut oil.
- Make equivalent of eggs needed for each batter using
- Pour “egg mixture” into batter and add in coconut oil.
- Mix in 2-3 TBS of canola oil
- Mix in 2 organic apple sauce (cinnamon) cups
- Mix in 1/2 tsp. of alcohol free organic almond extract
- Mix in 1 TB of organic cinnamon
- Mix in 2 cans of organic pumpkin pie mix
- Mix in Blue Diamond Original Almond Milk *ONLY DO ONE CUP at a time* until desired consistency is achieved! Batter is best if not too thick or runny. Be sure to get out as many lumps as you can. Using a beater on medium high for approximately 2 minutes works great – be sure not to add in to much air to your batter.
We cook ours with Earth Balance non GMO and soy free butter spread. Oh my is that stuff good!!!! We have been using it now for 8 yrs and love it!
Top them with GRADE B Maple Syrup and Dairy/Soy/Nut Free chocolate chips – YUMMY!!!!!!
Heat up griddle to the proper temperature and begin making your very own pancake goodness and enjoy!
